Recipe Card: Bunny's Best Scones
My great grandmother's recipe. A family favorite for afternoon tea.
As long as I can remember, this recipe has been a tea-time and Sunday morning staple for our family. The recipe belonged to my great grandmother - everyone called her Bunny. More dense and less crumbly than your traditional scone, even those who say scones aren’t their thing fall in love with these. You can play around with the flavor and fruit added, but the cranberry and orange are how Bunny made them, and it’s still our favorite version.
Bunny’s Best Scones
Yields: 6-8 scones
Ingredients:
2 cups flour
3 teaspoons baking powder
1 teaspoon salt
1/3 cup sugar
4 tablespoons softened butter
1 egg
1 tablespoon orange zest
1/4 cup orange juice
Preheat the oven to 400 degrees.
In a medium mixing bowl, whisk together 2 cups flour, 3 teaspoons baking powder and 1 teaspoon salt. Set aside.
In a large mixing bowl, either with a stand mixer with whisk attachment or hand mixer, on medium speed, combine 1/3 cup sugar, 4 tablespoons softened butter, 1 egg, and 1 tablespoon orange zest.
Add the dry ingredients to the wet, combining with a mixer on medium speed until pea-sized pieces form. Add 1/4 cup orange juice and combine until incorporated. The dough will be sticky.
Place large scoops of dough on a baking stone or cookie sheet.
Bake uncovered on the center rack of the oven for approximately 12-15 minutes or until the scones begin to turn golden at the edges.
Remove and let cool until warm. Enjoy with butter, jam and afternoon tea.
